I'd say play Unknown once with no intent on actually finishing the campaign, just to get an appreciation of what was changed/added. Learn the maps and use them to your advantage. -Play the game on easy/normal first as the game can get overwhelming quickly. When you get the hang of it you may wanna play it over and fine tune base building (satellite placement, power and panic management, etc) and research order.

Tactical gameplay gained a lot of new dimensions and the scarcity of meld made determing mission priority a bigger deal, especially when your A-team wasn't in good shape. Enemy Within is IMO an easier game to play, as most missions don't have time limits, whereas in XCOM 2 you'll find a lot of missions have to be completed within a low number of turns (12 or less). Difficulty wise, the Long War is on par with Classic EU/EW difficulty on its NORMAL setting. Its recommended you play on NORMAL until you get used to all the changes Long War does to the game. The enemy spawns are pretty manageable on the way up the map because they are always in front of you. On the way back, you’ll have one spawn that will include a Sectoid and Thin Man in front and one Thin Man behind. The rest of the spawns are one Thin Man each. Pretty easy if you’re keeping your Overwatch up and your weapons loaded.

All useful and fun to play with. The biggest change to XCom were the ability to put your troops in Mechanized Suits and to genetically modify troops to give them extra abilities. The Mechanized suits (MECs), have the ability to change the way you play dramatically. So if Enemy Unknown was getting stale this would greatly enhance replay value.
